Peanut Butter Cookie Dough Balls
These cookie dough balls are the ultimate snack for the whole family. Soft, naturally sweetened and packed with whole foods, they’re the kind of snack you’ll make on repeat. With around 3g of protein per ball, they’re perfect for a nourishing pick me up - especially for postpartum mums and busy kids. Makes: 16-18 balls

INGREDIENTS:
1/2 cup peanut butter
1/4 cup pure maple syrup
2 tsp vanilla extract
2/3 cup rolled oats
1/3 wholegrain oats
1/2 cup desiccated coconut
1/2 tbsp chia seeds
Optional: 1/4 cup chocolate chips
Optional: pinch of sea salt
METHOD:
Add the peanut butter, maple syrup and vanilla extract to a medium-sized bowl. Mix until combined.
Add the oats, desiccated coconut, chia seeds and salt to the bowl. Mix until combined. Fold through the chocolate chips (if using).
If the mixture feels too dry (it depends on the peanut butter used), add 1 tbsp of warm water and mix again until combined.
Roll into balls or press into a mini muffin tin. Pop in the fridge or freezer for around 30 minutes to 1 hour or until set.
To store:
Store in the fridge or freezer and watch them disappear!
