Sprinkle Bites
Meet your kids new lunchbox snack. These will be the best 10 minutes you’ll spend this week! Perfect for lunchboxes, afternoon snacks and even delish for parents. I mean, who doesn’t love sprinkles?!
This recipe uses pantry staples and is such a cost effective way to bring a bit of fun to the lunchbox with wholesome ingredients.
Makes: 20 balls

Ingredients:
1 cup rolled oats
1/2 cup desiccated coconut
1/3 cup cocoa/cacao
1/4 cup maple syrup
1/2 cup coconut oil, melted
2 tbsp hemp seeds
2 tbsp ground flaxseed
1 cup dates, soaked
Optional: 1 tbsp unflavoured collagen
Sprinkles, for rolling
Method:
Soak the dates in boiling water for 5 minutes then drain and set aside.
Add the oats to a food processor and blitz until finely ground. Add all the remaining ingredients to the food processor (except the sprinkles) and blitz until it combines. The mixture should be sticky enough so the sprinkles can stick and also easy to roll into balls.
Roll the mix into balls then coat in sprinkles (I pour the sprinkles onto a bowl/plate).
Pop in an airtight container in the fridge for up to 5 days and you can add straight to the lunchbox from the fridge.
Alternatively, you could freeze for up to 2 months in an airtight container.
