Oat Muesli Bites

Nut free, DF and refined sugar free Oat Muesli Bites

We make these Muesli Oat Bites most weeks! They are quick to whip up, made with pantry staples and are packed with lots of goodies to keep little ones fuelled. Perfect addition to a lunchbox or a snack with some healthy fats for good measure.

Prep time: 10 minutes + 1 hour to set in freezer

Freezer friendly and lunchbox friendly

Ingredients:

  • 15 dates, pitted

  • 1 1/2 cups organic rolled oats

  • 1 tbsp hulled tahini

  • 2 tbsp hemp seeds

  • 1/3 cup sunflower seeds

  • 1-2 tbsp of the date water

  • 2 tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • Optional: dark chocolate chips

Method:

Line a loaf tin or 20 x 20cm baking pan with baking paper.

Cover the dates in boiling water and allow to soften for 5 minutes. Remove the dates from the water and place them into the food processor. Set aside the water to be added soon.

Add all the remaining ingredients into a food processor and whizz until it combines. Stir through the chocolate chips (if using) then transfer the mixture to the loaf tin/baking pan.

Press the mixture with the back of a spoon to create a smooth top. Pop in the freezer for a 1-2 hours until set.

Once set, slice and enjoy!

Storage:

These can be stored in the fridge or freezer. If you are adding to a lunchbox, these will last better throughout the day if they come straight from the freezer.
